This is a family favorite and a must have every other Thursday when my handsome hubby returns from a hard week of work. That's the one thing he "insist = request" that I do...I have it pretty easy! My version is a little different then any of the others floating around out there...
1 lb. ground beef or (2 lbs ground beef and eliminate the Morning Star below)
1 bag Morning Star Meal Starters -Grillers - Recipe Crumbles
2 cups frozen corn -/+ depending on your taste or (1-2 cans corn to your liking)
(2) 1/4 cups Tones Taco Seasoning or 2 packages (we like mild)
1 can Westbrae Black Beans or (1 can bean of choice)
1 can Westbrae Chili Beans (kidney, black & pinto) or (1 can bean of choice)
2 cans Muir Glen diced tomato's with green chili's or Rotel
1/2 cup Hidden Valley Ranch Dressing -/+ depending on your taste or (2 packs dry ranch)
2 1/2 cans of water (use tomato can to get out all goodies)
1 block Sharp Cheese (grate yourself) or bag of already shredded
Sour Cream
1 Bag corn chips of choice
Brown beef, add crumbles, corn, taco seasoning, black beans, chili beans, *diced tomato's, ranch dressing and 2 1/2 cans of water. Bring to low boil...
*I like to puree my diced tomato's to eliminate chunky tomato's & chilli's...I then add the water to blender to get out all goodies.
Crunch chips in bowl, ladle soup...add dollop of sour cream...sprinkle fresh grated cheddar cheese...
...Enjoy!
This will easily serve a family of four a great dinner, 1 leftover dinner and perhaps even a single lunch or two.
