Pecan Pie...

I've never consumed a piece of Pecan Pie. I know...how? How can I be a born and raised southern girl and never eaten Pecan Pie...the answer is because I hate nuts cooked in any kind of food. I do love the crust of the pie, which my oldest used to save me...sadly he now consumes the crust as well.

This year, and because I had a bag of Pecans in the freezer, I wanted to have my oldest bake a pie...he loves them, his dad loves them, my mom loves them...and although Maw Maw always makes them for Christmas, I wanted to bake one for my family this year.

I looked through my grandma's recipe book and was thrilled to find a torn out recipe for a simple Pecan Pie...

Karo Classic Pecan Pie

3 eggs, slightly beaten
1 cup Karo light or dark corn syrup
1 cup sugar
2 tbsp. butter (melted)
1 tsp. vanilla
1 1/2 cups pecans (I chopped & toasted mine)
1 unbaked (9") pastry shell

In large bowl stir together first 5 ingredients until well blended. Stir in nuts. Pour into pastry shell. Bake in 350 degree oven 50-55 minutes or until knife inserted halfway between center and edge comes out clean. Cool. Serves 8.

Didn't turn out too shabby...the Pecan Pie people eaters in my family said it tasted delicious.
